Liona’s drying process is still being developed. We plan consistent preparation, monitored drying, validated endpoints, and moisture-protective packaging; we do not yet claim a finished commercial process.
Prepare evenly
Pieces of different thickness dry at different speeds. Consistent cutting helps avoid a dry exterior masking moisture in a thick center. Clean handling and food-contact surfaces matter before the dehydrator runs. Drying is not a method for recovering spoiled or contaminated material.
Validate the endpoint
Time alone cannot establish the result: loading, humidity, equipment, and slice size change each run. Commercial shelf-life claims need a validated process and appropriate checks, potentially including water activity. We have not published a validated shelf life or a testing certificate for unreleased products.
Pack with traceability
Material needs suitable cooling and packaging that will not trap condensation. Lot identification should connect the package with the preparation record. Our launch work includes storage directions and package performance, so customers receive more than a visually dry ingredient in an attractive bag.
