Method
- Check that the mushrooms are a food-grade culinary variety, not woody medicinal slices or a concentrated extract. Rinse away grit if the package directs.
- Combine mushrooms, water, onion, carrot, garlic, and bay leaf in a saucepan.
- Bring to a boil, then lower to a gentle simmer for 40–45 minutes, following any additional cooking directions on the mushroom package.
- Strain through a fine sieve. Season after simmering, since evaporation changes saltiness. Use promptly or cool in shallow containers and refrigerate without leaving it at room temperature for hours.
