The short answer

Cultivated chestnut mushrooms sold as Pholiota adiposa have brown caps and a firmer culinary texture. Names can vary in retail use, so ask for the species rather than relying on “chestnut” alone.

Select a cooking use

Their firmer bite works in rice dishes where a delicate ingredient might disappear. Trim growing material and cut large pieces to a consistent size. Cook thoroughly before combining with rice or other ingredients that only need reheating.

A common-name caution

Some shops use chestnut to describe brown button mushrooms. That is a different mushroom from the cultivated Pholiota discussed here. A recipe’s intended ingredient and the seller’s actual species should match; this page is not guidance for identifying wild brown mushrooms.

A cultivation candidate

Liona has not committed to a chestnut harvest or a standing supply. It remains a possible fresh-local addition after grow trials. Our fried-rice suggestion can be explored with an appropriate food-grade cultivated ingredient from a current supplier while our own operation is still planned.
